Did you know that spices were once used as money? The word “salary” derives from when workers in the Roman Empire were paid in salt. Saffron is one of the most expensive spices today, costing over $1,000/lb at retail price.

Fresh spices differ from dried spices, especially in the intensity of flavor. Red pepper, the most widely consumed spice in the world, has various names for when it is fresh or when it is dried.
